I stepped into the kitchen at the age of 15 to learn the flavors I absorbed around the big tables in Ayvalık professionally from an early age. 
 
I have always believed in good ingredients and good taste, and I have always cooked food in a way that is true to its essence, that is traditional yet different, that is how I like to eat it, sometimes in its purest form and sometimes in ways that do not fit the literature at all.
 
In The Red Balloon kitchen, we have adopted seasonality and sustainability as a principle and by finding the best of the ingredients, we offer you North Aegean and Mediterranean Cuisine with our “New Cuisine” approach.
